Glazed Carrots

Glazed carrots are a side dish that goes well with many different meals.

Ingredients

Cooking Carrots

  • 1 pound carrots, washed and peeled
  • 1/4 teaspoon salt
  • 3 cups water

Glaze

  • 2 tablespoons honey
  • 2 tablespoons vegan butter
  • 1 tablespoon lemon juice
  • 1/4 cup light brown sugar
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1/4 cup parsley, chopped

Instructions

  • Cut the washed and peeled carrots into 1/2 inch thick slices.
  • Place the carrots and salt into a large saucepan with about 2 cups of water.
  • Bring the water to a simmer and cook for 5-6 minutes, until the carrots are tender.
  • Drain the carrots then place them back into the saucepan.
  • Add the butter, honey, lemon juice, brown sugar, salt and pepper.
  • Cook until the carrots are coated with the glaze, about 5 minutes.
  • Place carrots in a serving bowl and garnish with parsley.
