Glazed Carrots
Glazed carrots are a side dish that goes well with many different meals.
Cooking Carrots
- 1 pound carrots, washed and peeled
- 1/4 teaspoon salt
- 3 cups water
Glaze
- 2 tablespoons honey
- 2 tablespoons vegan butter
- 1 tablespoon lemon juice
- 1/4 cup light brown sugar
- 1/4 teaspoon black pepper
- 1/4 teaspoon salt
- 1/4 cup parsley, chopped
Cut the washed and peeled carrots into 1/2 inch thick slices.
Place the carrots and salt into a large saucepan with about 2 cups of water.
Bring the water to a simmer and cook for 5-6 minutes, until the carrots are tender.
Drain the carrots then place them back into the saucepan.
Add the butter, honey, lemon juice, brown sugar, salt and pepper.
Cook until the carrots are coated with the glaze, about 5 minutes.
Place carrots in a serving bowl and garnish with parsley.
