Pineapple Chicken Curry Salad
This flavorful chicken salad is crunchy and slightly sweet.

- 1/2 cup mayonnaise
- 1/2 teaspoon curry powder or to taste
- 1/8 teaspoon salt or to taste
- 1/8 teaspoon pepper or to taste
- 1/8 teaspoon ginger or to taste
- 2 cups cooked chicken, cut up
- 1 cup celery, sliced
- 1/2 cup green pepper, diced
- 20 ounces crushed pineapple, drained
Mix the mayonnaise, curry powder, salt, pepper and ginger.
Add the chicken, celery, green pepper and pineapple then stir well.
Refrigerate for at least 2 hours.
Serve on your favorite bread, salad greens or cantaloupe halves.
