Salmon Cake With Dijon Herb Sauce

 

Salmon Cakes with Dijon-Herb sauce are a delicious meal.  The spices added to the salmon cake give it lots of flavor.  The Dijon-Herb sauce tops the salmon cake and brings a complimentary savory flavor.   The salmon cakes are lightly coated in panko bread crumbs, so there is a little crunch on the outside.  So good!

 

I usually serve Baked Sweet Potato Fries or Baked French Fries, green beans and/or carrots as side dishes to the Salmon Cakes with Dijon-Herb sauce.

 

Don't let the number of ingredients in the recipe intimidate you.  It doesn't take too long to prepare despite the number of ingredients.  When I make Salmon Cakes with Dijon-Herb sauce, I make the Dijon-Herb Sauce first then store it in the refrigerator until I am ready to use it.

 

This recipe makes four salmon cakes, so it makes two meals for my husband and me.  They do warm up nicely.  I store the sauce separately then add it to the salmon cakes after I have warmed them in the microwave for a couple minutes.

      Salmon Cakes
      Dijon-Herb Sauce

      Dijon-Herb Sauce
      1. Mix together the ingredients for the sauce. Set aside.
      Salmon Patties
      1. Put the 1/4 cup of the Panko Bread Crumbs on a piece of wax paper. Set Aside.
      2. Mix salmon, beaten egg, mayonnaise, pepper, old bay seasoning, onion, garlic, celery seed, parsley, Worcestershire sauce, Dijon Mustard and 1/4 cup of the Panko bread crumbs in a large bowl.
      3. With damp hands, divide the mixture into four even parts and form each part into a patty.
      4. Coat each patty with the Panko Bread Crumbs.
      5. Heat one tablespoon of oil in a skillet over medium heat. Add the patties and cook 4-5 minutes then turn over and cook another 4-5 minutes, or until golden brown.
      6. Top the salmon patty with one tablespoon of the sauce.
