Salmon Cakes with Herb-Mustard Sauce

    1. Mix together the ingredients for the sauce. Set aside.
    Salmon Patties
    1. Put the 1/4 cup of the Panko Bread Crumbs on a piece of wax paper. Set Aside.
    2. Mix salmon, beaten egg, mayonnaise, pepper, old bay seasoning, onion, garlic, celery seed, parsley, Worcestershire sauce, Dijon Mustard and 1/4 cup of the Panko bread crumbs in a large bowl.
    3. With damp hands, divide the mixture into four even parts and form each part into a patty.
    4. Coat each patty with the Panko Bread Crumbs.
    5. Heat one tablespoon of oil in a skillet over medium heat. Add the patties and cook 4-5 minutes then turn over and cook another 4-5 minutes, or until golden brown.
    6. Top the salmon patty with one tablespoon of the sauce.
