  1. Using an electric mixer, cream the butter, sugar, egg and vanilla extract.
  2. Add the flour, salt, baking soda and cinnamon. Mix until thoroughly combined.
  3. Scrape the dough onto a large piece of plastic wrap and form a log about 2-inches in diameter.
  4. Completely wrap the dough and refrigerate until firm, at least 20 minutes or overnight.
  5. Preheat oven to 400F.
  6. Slice the dough into about 1/8-inch thick cookies and place them about 1-inch apart on a silicone baking mat lined cookie sheet, or spray a cookie sheet lightly with cooking spray.
  7. In a preheated oven, bake the cookies 8-10 minutes or until lightly browned around the edges.
  8. Allow the cookies to cool for 1-2 minutes on the cookie sheet, then remove to a cooling rack to cool completely.
