Egg Wash
  • 1jumbo egg whiteThis egg white is for an egg wash to top the cookies.
  • 1/2teaspoon waterThis water is for an egg wash to top the cookies.

Instructions
  1. Preheat oven to 325F.
  2. For the egg wash, beat egg white and water. Set aside.
  3. Combine the flour, baking soda and salt. Set side.
  4. In a mixing bowl, cream coconut oil, vegan butter and granulated sugar.
  5. Beat in egg and almond extract.
  6. Gradually add the flour mixture to the coconut oil mixture.
  7. Roll into 1-inch balls or use a small cookie scoop.
  8. Place 2-inches apart on ungreased cookie sheets, with or without silicone baking mats.
  9. Flatten with a fork in a criss-cross pattern.
  10. Brush the egg water combination over the cookies.
  11. Sprinkle with sliced almonds.
  12. In a prepared oven, bake for 14-16 minutes or until the edges and bottoms are lightly browned.
  13. Cool for 2-3 minutes on the cookie sheet then transfer to wire cooling racks to cool completely.
