Pineapple Coconut Smoothie is a refreshing beverage made from orange juice concentrate, coconut milk and canned pineapple. The flavors of the orange juice and pineapple are the strongest flavors.
The orange juice concentrate adds thickness to this smoothie. Optionally, add ice cubes to make the beverage thicker. My husband, Jeff, prefers the smoothie with ice cubes. Jeff likes a thick smoothie. I prefer this smoothie without the ice cubes because I don't care for the little bits of ice that are left after putting all of the ingredients through a blender. It is a good smoothie with or without ice cubes.
This smoothie is quick and easy to make because of the limited number of ingredients. All of the ingredients came out of a can or similar container, so no washing or chopping of any fruit.
I've been so into smoothies lately. I've tried a variety of recipes but have only found a few that Jeff and I like. Some smoothies can be time consuming to make because of the number of ingredients and the washing and cutting of the fruit or vegetables.
My favorite smoothie is the Tropical Fruit Smoothie. It's made with just fruit and pineapple juice. Some fruit is fresh, some frozen. The frozen fruit gives the smoothie its thickness.
This is a recipe that I have had for awhile. I don't recall where it came from originally.

Pineapple Coconut Smoothie
- 16 ounces canned pineapple You can use pineapple chunks or crushed pineapple.
- 6 ounces frozen orange juice
- 1/2 cup coconut milk
- 1 cup ice cubes, optional I prefer to omit the ice cubes. Add more ice cubes to have a thicker smoothie.
- Place all of the ingredients in a blender and puree until smooth.
- Pour into glasses and serve.
