Apple Butter Waffles have a hint of apple butter flavor, which reminds me of autumn. These waffles are a tasty alternative to standard waffles. They are good at anytime of the year, but are especially tasty in the fall.
Apple Butter Waffles are quick and easy to make. You mix the dry ingredients, then the wet ingredients then combine into one batter. It will be a thick batter. If the batter is too thick, then add a little more soy milk. Let the batter rest for a few minutes. The batter will rise some. Using your waffle iron, cook the waffles per the manufacturer's instructions, then top with your favorite waffle toppings.
I was looking for recipes that have apple butter as an ingredient and came across a recipe for Apple Butter Waffle Donuts. The recipe sounded yummy. I decided to just make waffles and not follow the original recipe's instructions to fry the waffles to make donuts. The waffles are delicious. This recipe will make delicious pancakes, too!
When making pancakes, I add an additional 1/2 - 3/4 cup of soy milk because the batter is too thick for pancakes.
I also altered the recipe so that it is dairy-free. You can use milk and butter instead of soy milk and vegan butter, if you prefer.
I have a standard waffle iron that makes one four-section waffle. This recipe will make about four four-section waffles. So, it makes more than what my husband and I will eat. I have tried cutting the recipe in half and it worked out fine. My mother like to freeze her extra waffles and pancakes then reheat them in the toaster. My husband and I haven't had much luck doing that, so I try to cut the waffles and pancake recipes so that it makes just one serving for us. If there are leftovers, the birds end up with a breakfast, too!

Apple Butter Waffles
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup soy milk
- 1/2 cup apple butter
- 1/4 cup maple syrup
- 2 tablespoons vegan butter, melted
- 2 jumbo eggs
- Whisk together the flour, baking powder and salt. Set aside.
- Stir together the soy milk, apple butter, maple syrup, melted vegan butter and eggs until thoroughly mixed.
- Add the flour mixture to the soy milk mixture and stir to combine.
- Cook your waffles according to your waffle maker instructions.
- Top with butter and syrup.
